ummmmmm i think it's because with today's society there are so many different days and celebrations for different religions, they've all sort of melded together to include all beliefs and icons...
the love is because, that is why St. Valentine died, for something he believed in. Love (and marriage of two young loved ones... yeah because the emperor had a law against young men marrying, because married men didn't have to go to war, so he wanted more soldiers. Hence the law.)

The reason for cupid is is probably because someone at a card company or other such establishment saw the extreme money which could be made by bringing in a creature who spreads love into cards.
